Aging sometimes does good to the Syrah wines since it makes them change and they become Tertiary in the aroma and taste. In the course of the time, the tight tannins present in Syrah wines originally may soften, causing the mouthfeel to become very silky. Moreover, aging gives a wide range of flavors such as dried fruit, leather, tobacco, and certain spices, which brings forth the further dimension and complexity to the wine.
