Psagot winery is located in Binyamin in the Jerusalem Hills and boasts prime vineyards planted on mountainous terraces at 700-900 metres above sea level. This setting is ideal for producing quality wines thanks to the sunny summer days and mountain breezes which help to preserve freshness and aromatics in the grapes.
The land here has been used to grow grapes for thousands of years and is even said to be the place where Abraham farmed and made wine. An ancient wine press was found on the estate as well as a coin which dates back to 66-73 CE and featured on the Psagot labels.
Sinai is one of Psagot’s most popular wines thanks to the easy-going flavour profile which is bursting with luscious dark berries and plums with gentle hints of baking spice. On the palate there are smooth tannins, a medium body and a long fruity finish. The young wine is aged in Psagot’s unique cellar set in an ancient cave where the darkness and humidity provide ideal maturation conditions. This is an ideal wine to enjoy during relaxed family dinners alongside red meat dishes such as fresh pasta with a rich ragu sauce or roast beef.
