How does oak aging affect Sauvignon Blanc wines?

Although Sauvignon Blanc is usually not oaked to retain its crisp and lively character, some winemakers decide to oak age it, so as to add more texture and complexity to the wine. Oak barrels can bring alot to the wine slight notes of vanilla, toast, and spice, adding layers of the depth to the wine’s fruitiness. Nevertheless, too much oak tends to overcome the light flavors of the Sauvignon Blanc, and therefore, it is not used very often or sometimes avoided altogether.
