Even though Cabernet Sauvignon is mostly associated with still red wines, it can also be used for producing sparkling wine in the style Blanc de Noirs that translates as “white from blacks.” In this process, red skins of Cabernet Sauvignon grapes are separated from the juice before fermentation, which produces either a white or a rose-colored wine. Blanc de Noirs wines that are sparkling made from Cabernet Sauvignon grape variety are characterized by red fruit flavors including raspberry and strawberry, fresh acidity and tiny bubbles.
