Located in the Hunter Valley in New South Wales, Tyrrell's Wines has been one of Australia's premium producers for over 150 years. The company, which also owns vineyards in Heathcote in the Victoria wine region, is well known for its award-winning Shiraz and also for producing white wines such as Semillon and Chardonnay. The first harvest of the company dates back to 1864 (4 years after the foundation by Edward Tyrrell), and the company is currently led by the fourth and fifth generations of the family.
Tyrrell's Vat 8 Shiraz Cabernet is a mostly Shiraz blend. The Shiraz grapes come from the Tyrrell Estate ‘Ashmans’, while the Cabernet Sauvignon grapes come from the Pokolbin Hills estate. Fermentation takes place in separate parcels in stainless steel tanks, and the wine is then blended after a short period of maturation. The finished wine is aged for another 6 months in French oak barriques.
It is a wine of excellent structure where the Shiraz brings the sweetness and concentration of the fruit, while the Cabernet adds body. The wine reveals an intense flavor profile with notes of plum and dark berries, followed by hints of chocolate and sweet spices. On the palate, it is round, with soft and ripe tannins. The finish is long and recalls light mineral and spicy notes. Try it with roast lamb or grilled red meat.
