The Hilt is a Californian wine estate headed by masterful wine-maker Matt Dees. It can be found in Rancho Salsipuedes, a sprawling piece of land in the Sta. Rita Hills Valley AVA. Being relatively exposed and close to the ocean, this is a harsh climate for grapes. Cold salty air and twisting winds shape the grapes that are grown here into magnificently concentrated fruits.
This hard-earned character is evident in The Hilt’s wines. They grow a mixture of Chardonnay and Pinot Noir, expressed both as single varietals and sparkling blends. This Pinot Noir is sourced from four different vineyards across the estate, each offering a different angle on the sensitive grape.
This wine is dark and intensely perfumed, exhibiting notes of rose petals, cherry and rich oranges, along with deep savoury notes of tobacco and dried sage. The fruits were aged in barrels of French oak and the wine shows gentle, smooth tannins. The palate combines an acidic brightness with deeper, earthy tones. Look for flavours of black cherry, pomegranate, fresh herbs and a delicate saline edge. This is an elegant, focused wine, and should be paired with an equally refined dish. Think about enjoying it alongside a mushroom pie, salmon steak or a plate of soft cheese.
