Spread over 40 hectares of vineyards, the Sonberk winery was founded in 2003 in an area where the production of wines has very ancient roots. According to preserved sources, the hill was cultivated with vines as early as the 13th century and the local wines were among the most sought-after in the country. According to the project of the well-known architect Josef Pleskot. In 2008, a modern cellar was built, which is now considered one of the most beautiful wine buildings in the country. The annual production of the winery is around 130,000 bottles.
Palava is a fairly widespread vine in Moravia, created in the 1950s from a cross between Traminer and Müller Thurgau vine by Josef Veverka. The Sonberk company produces a dry and sweet version. The grapes come from the company's vineyards, on loess-type soil with excellent exposure.
Sonberk Palava Noble Rot is a sweet and rich wine, characterized by an intense golden color with straw edges. The nose reveals aromas of candied and dried fruit, honey, and figs. On the palate, the wine is harmonious, elegant, and juicy with an excellent concentration of tropical fruit and citrus notes. The finish is persistent and fresh. Perfect with fruit sorbets, it is an absolute must-try with goose liver or blue cheese.
