Maurodos, better known under the San Román label, is the work of Mariano García, one of Spain's most respected winemakers, who worked for thirty years as technical director of Vega Sicilia. San Román Malvasía is the first white wine of the Maurodos project, produced from old vineyards of Malvasía Castellana, also known as Doña Blanca. After founding Bodegas Mauro in 1980 in the Ribera del Duero, Mariano García started the Maurodos project in 1995 in the municipalities of Pedrosa del Rey, Villaester, and San Román de Hornija, in the Toro wine region. The project focuses mainly on the Tinta de Toro grape, but also other varieties such as Grenache or Malvasia.
The grapes come from vineyards that are over 60 years old, located 700 meters above sea level. Despite not having the organic certification, the plants are grown without the use of herbicides or pesticides. After harvesting, the grapes macerate with their skins for 12 hours, before being transferred to 500-liter barrels for fermentation. Finally the wine ages for 10 months.
San Roman Malvasia is a fragrant and round wine with fruity and saline notes. On the palate, it is elegant and enveloping thanks to the aging period on the lees, and shows an incisive acid vein. Try it with white meat and soft cheese.
