Situated in the Adelaide Hills wine region of Australia, Saint & Scholar produces a range of wines that reflect the terroir and potential of this beautiful region. The estate, which covers approximately 49 hectares of vineyards, is the project of winemakers Stephen Dew and Reid Bosward, the saint and scholar of the winery’s name. The vineyards enjoy a hilly position with a northerly exposure, good drainage, and a cool climate that promotes excellent balance in the wines.

The Sauvignon Blanc grapes are harvested early in the morning at optimum ripeness, to ensure the wine has perfect acidity. After fermentation, which occurs with a small amount of lees to add texture, the wine is cold-stored until bottling, to preserve its aromatics.

Saint & Scholar Sauvignon Blanc is a fresh, lively wine with a bright, pale straw-yellow color and some greenish highlights. Its aromatic profile is intense, with notes of grapefruit, tropical fruit, melon, and white stone fruit, as well as some varietal hints of cut grass. On the palate, it is dry and refreshing, with a strong acidic streak and a good fruit concentration. The finish is dry and pleasant and recalls citrus notes. Served chilled, it is the ideal summer aperitif, but it also goes well with pasta with pesto, salads with shellfish, and some light vegetarian recipes.
