This striking Gran Reserva Cava begins life in a single vineyard called Finca Serral del Vell which is set on a gentle rolling hill in the Alt Penedes. The site has recently been named one of Catalonia’s twelve Cava de Paraje Calificado vineyards, recognising the vineyard’s exceptional potential for producing top Cavas. The soil here is predominantly calcareous with plenty of stones and gravel which allow for excellent drainage. This helps Recaredo’s winemakers to craft long-lived, refined Cavas with a distinctive minerality which immediately transports you to the vineyard where this wine was born.
After the initial fermentation, the bottles are transferred to the family’s traditional cellar where they spend a minimum of 8 years ageing on the lees. Thanks to Recaredo’s unhurried philosophy, this allows complex layers of flavours and aromas to develop in the bottle. First impressions remind of freshly-baked croissants, toast and honey aromas from the lengthy maturation process, while on the palate crisp lemon zest and white peaches mingle with cream and sourdough bread.
Recaredo avoids adding sugar when disgorging its Cavas to enhance the natural fresh acidity and pure expression of the terroir. This crisp, dry character makes the Brut de Brut a great partner for baked cod or a classic local dish of black rice with cuttlefish and aioli sauce.
