Founded in 2001 in New York's Finger Lakes wine region, Ravines Wine Cellars is a family-run winery owned by Morten and Lisa Hallgren. The estate encompasses approximately 52 hectares of vineyards, producing internationally award-winning wines. The Finger Lakes Riesling itself has been ranked in Wine Spectator's Top 100 wines three times.
The Riesling grapes come from the White Springs and 16 Falls vineyards, both located on the slopes of Seneca Lake. The former, planted in 2003-2004 on limestone soil (a rarity in the region), enjoys eastern exposure. The latter, on the other hand, benefits from western exposure and is slightly older, having been planted between 1998 and 2002 on clay-loam soil on a shale subsoil. After hand-picking and whole-cluster pressing, fermentation takes place in temperature-controlled stainless steel tanks, and the finished wine rests on the lees for a few months before bottling.
The result is a dry, lively, and elegant wine, with a broad aromatic profile revealing notes of green apple and pear, white flowers, and citrus, with hints of wet stone. The palate is fresh and mineral. It has a bold character and vigorous acidity. It is vibrant and well-balanced, with a long, refreshing finish. It works very well with seafood, crab soup, sushi, or on its own as an aperitif.
