Psagot is one of Israel’s most exciting young boutique wineries which draws inspiration both from the country’s ancient viticultural traditions and modern European winemaking techniques and expertise. The winery is set in Binyamin in the Jerusalem Hills which according to legend is where Abraham himself once farmed and made wine. Ancient wine presses have been found on the estate as well as a cave which is now used as the winery’s cellar for ageing their delicious red wines.
This majestic Israeli red is composed of Syrah, Petite Sirah, and Mourvedre grapes harvested from Psagot’s terraced vineyards set on the hillsides of Binyamin at 700-900 metres above sea level. Conditions here are ideal for quality winemaking since the grapes receive plenty of sunshine as well as cooling breezes from the Jerusalem Hills which preserves freshness and aromatics.
Peak is made with varietals from southern France which thrive in the hot conditions here, producing a bold, full-flavoured wine with plenty of complexity and power. On the nose there are vibrant notes of cassis, blackberry and dark cherry while the first sip reveals a great intensity of flavour, firm tannins and a very smooth and long finish.
A Birthday to Remember with DAOU & Colomé Celebrating my mother’s birthday was made even more special thanks to two incredible wines—DAOU Cabernet Sauvignon 2021 and Colomé Auténtico Malbec 2020. The star of the evening was undoubtedly the DAOU Cabernet Sauvignon. From the first sip, it enveloped us in its rich, velvety embrace. The deep dark fruit flavors, hints of cocoa, and perfectly balanced oak made every glass feel like a true indulgence. It was bold yet elegant, a wine that effortlessly brought warmth and joy to our gathering. Seeing my mother savor each sip with a smile made it all the more memorable. The Colomé Auténtico Malbec also delivered beautifully, with its pure expression of high-altitude Malbec. It was powerful, with ripe blackberries, spice, and a smooth, lingering finish—an excellent complement to the evening. These wines didn’t just enhance our meal; they became part of the celebration, elevating every toast and conversation. A heartfelt thank you to DAOU and Colomé for making this special occasion truly unforgettable!
