Nicolas Rossignol comes from a long line of Volnay wine-makers. In 1997, he founded his own estate with a humble 3 hectares - this has expanded into 17 hectares of vineyards, spanning a multitude of world-famous Burgundian appellations, such as Volnay, Pommard, Lavières and Aloxe-Corton.
This particular bottle comes from the Premier Cru vineyard of “Santenots”, which is considered a part of Volnay, although it lies just across the administrative border in the commune of Meursault. Santenots is notable for its clay-rich soils, which impart a certain voluptuousness to its wines. This bottle is no exception - it is an exceptionally rich and deep wine, crafted from 100% Pinot Noir.
Exhibiting a deep ruby colour in the glass, it strikes a perfect balance of elevated aromatics and round, mouth-filling body. You can discover strong notes of cherry, raspberry, violet and earthy forest floor, along with an animal-like musk that sings “Santenots”. It lies firmly on the fuller side, for a Pinot Noir, and the palate shows excellent acidity, velvety tannins, and a tart finish, strongly reminiscent of black cherry. The earthy side of this wine will mesh fantastically with any mushroom-based dishes or classic Burgundy recipes, such as beef bourguignon.
