If you’re searching for a wine that captures the essence of Chablis in a bottle, look no further - Guillaume Michel's winemaking philosophy is centred on the importance of terroir-driven wines. The grapes used in Louis Michel & Fils' wines are harvested from some of the most esteemed vineyards in Chablis, most of which fall within a 2km radius of the winery itself.
Located southwest of the town of Chablis, “Vaillons” is one of the largest Premier Crus in the region and is frequently divided into other, smaller Premier Crus. The 129-hectare patch of land is defined by its warmer climate, its Kimmeridgian soils, and the delicate, floral and sometimes spicy character of its wines.
This is a blend of several Vaillons Premier Crus, replete with scents of pear, apple, lemon, toasted nuts and hints of tobacco. It is a warm and comforting wine - typical of this specific location. On the palate, the tasting experience blossoms with strong notes of minerality, and rich, all-encompassing flavours of green apple, peach, orange and other citrus fruits. The finish is refreshing, driven along by vivacious acidity and mineral notes. Serve this wine slightly chilled, with buttery scallops, smoked trout or a cheesy snack like gougères.

overall i had a positive experience, they have a wide range of wines, some which are hard to find anywhere else - the main reason i still buy from them, plus the discounts are fair and often, but... their codes for the first offer only works at the first offer, which if fine, but then why would you send me the voucher in each package i order, why spam me on the email and every time i log in on the website? this is really bothering me... then their rewards points system is useless, first of all because you only get peanuts even after spending €250 on an order, but even those peanuts will expire if you won't order again soon, which is unfair, to say the least... and lastly, if you get a corked wine, a wine with any deffect or a wine that leaked (my last order contained a bottle of $100 Caymus Cabernet with a leaking cork, which made the wine tasted cooked and flat), they have no procedure put in place for you to replace or return the wine or to get a refund or replacement - none, which is a big no no no for any wine collector... so all in all i give it 3 stars for now
