The Australian winery Larry Cherubino was founded in 2004 in Frankland River, Western Australia, by Larry and his wife, Edwina. The winery quickly achieved great success and popularity and today owns approximately 120 hectares of sustainably managed vineyards.
Their Uovo line includes a series of wines produced in ovoid concrete and clay tanks (“uovo” means "egg" in Italian). This unique technique, inspired by ancient Roman amphorae, was first adopted by Rhône winemaker Michel Chapoutier. The circulation of the lees, thanks to the internal currents in the egg, promotes the development of greater structure, adding consistency and complexity to the wine. The Chardonnay grapes for this wine come from vines located in Pemberton, in the Southern Forest of Western Australia. Fermentation takes place in ovoid tanks, where the wine ages on the lees for 14 months.
The result is a linear wine with a fresh, broad aromatic profile featuring notes of ripe grapefruit, stone fruit, lemon zest, and apple blossoms on a chalky, crushed-stone background. On the palate, it is taut, energetic, and vibrant, with crisp acidity and good structure. It is concentrated and juicy, with a long, refreshing, and mineral finish. Try it with crab.
