Often nicknamed “the Chablis of Italy”, Gavi is loved all over the world for its mouthwatering and crisp flavour profile and delicate citrus notes. Gian Battista Cambiaso is credited with planting the first Cortese vines, the grape variety used to make Gavi, in the Gavi region over 400 years ago. Today his Castello La Toledana is one of the few remaining Genoese manors still standing and still producing delicious Gavi wines.
Centuries of winemaking experience and time-honed expertise make these wines some of the region’s most sought after both in Italy and beyond. The grapes are carefully harvested and sorted to ensure quality, with fermentation taking place in temperature-controlled tanks to preserve the aromatics and natural freshness of the fruit. The young wine is then matured in neutral tanks before bottling.
On the nose there are attractive hints of white peaches, apricots, honey and zingy citrus while the first sip reveals a light body, refreshing acidity, and a pure, clean finish. The bright, vibrant character makes this a fabulous aperitif or a great partner for local dishes herby pesto sauces, grilled white fish from the Ligurian coast, or condiglione, the classic Ligurian tuna salad.
