Founded by Nicholas Foundis in 1992, Ktima Foundi is a small winery located in Northern Greece, in the picturesque wine region of Naoussa, famous for the production of Xinomavro. The vineyards of the estate are located at about 175-200 meters above sea level on diversified soils composed of heavy clay, light clay, or sand. The vines enjoy a Mediterranean climate but with a good amount of rain which favors the production of grapes with good acidity and structure. The company has a cellar equipped with modern technologies for the production of high-quality wines.

The wine is a blend of Xinomavro and Malvasia grapes from vineyards located within the Naoussa appellation, planted on clayey and sandy soils. The grapes are vinified separately. The Xinomavro (red variety) is subjected to vinification in white with a short cold maceration. Malvasia is fermented at low temperatures to guarantee the development of its aromatic character, and then left to rest on its lees, before being blended.

Produced in limited quantities, this white wine reveals a fresh and pleasant aromatic profile with notes of white and yellow fruit and floral nuances. On the palate, it is fresh and has a good body. The finish is long and recalls floral notes. It is excellent as an aperitif but will work deliciously with fried fish, especially trout, with recipes based on Mediterranean vegetables and fresh goat cheeses.
