Domaine EdeM is a boutique winery founded by Laura Catena together with the Catena Institute of Wine to launch the production of dealcoholized or low-alcohol wines, in honor of her mother, Elena Maza, wife of Nicolás Catena. The Catena Institute of Wine, founded in 1995, undertook this project, combining its winemaking expertise with cutting-edge technology, and creating a series of high-quality products that meet the market demand for healthier yet delicious drinks.

The Chardonnay grapes are carefully selected from mountain vineyards in the Uco Valley. After an early harvest, the verjuice is chilled until June, when it is infused with botanicals by the oenologists at the Catena Institute of Wine, and finally added with bubbles.

The result is a fresh, fragrant, and low-calorie non-alcoholic sparkling wine that reveals a brilliant golden color in the glass, enhanced by an intense foam. Its aromatic profile opens with notes of orange peel and eucalyptus, herbaceous and spicy hints, with touches of absinthe and cloves. On the palate, it is lively and thirst-quenching, with a pleasant hint of sweetness balanced by a crisp citrus acidity. It is light and fresh. Add a slice of orange and serve it well chilled with ice, and enjoy it both as an aperitif or paired with vegan and vegetarian appetizers.
