Located in Chavost, an old French village of about 275 inhabitants, located southwest of Epernay and perched on a limestone hill, the Laherte Frères winery has been a family business since 1889. Today it is run by Aurelien, the sixth generation of the family, according to the principles of biodynamics. The cultivation philosophy provides for absolute respect for traditions and the preference for natural methods instead of chemical products. The production process provides for separate vinification for each Cru, to also enhance the micro-climatic variations, which is followed by a selection and combination of the wines produced to create a harmonious, elegant, and fruity Champagne.

The "Les Grandes Crayères" is produced with grapes from old Chardonnay vines grown in the parcel of the same name, in the Coteaux Sud d'Epernay, and expresses all the complexity of its terroir. Alcoholic fermentation takes place in barrique and Champagne referments on the lees directly in the bottle until the following February, when the Maison proceeds to disgorgement and bottling. This is a Champagne Extra Brut Blanc de Blancs characterized by great delicacy, structure, and elegance.

On the nose, it expresses floral aromas, aromas of lime and citrus peel, fragrant fruit, pain brioche, hints of pastry, and spicy nuances. On the palate, the wine is savory and refined, with a clear and very fresh finish. Try it with grilled fish, steamed shellfish, or salmon sashimi.
