Champagne Charles Ellner Blanc de Blancs Brut

Founded at the end of the 19th century by Charles Ellner, Maison Ellner today owns around 50 hectares of vineyards, spread over more than 15 villages in the Champagne region, which produce around 50% of the total grape harvest used. Jean-Pierre Ellner, the grandson of the founder, is in charge, assisted by his daughters and grandchildren.

All the house wines are fermented in stainless steel tanks to preserve the flavors of fresh fruit (except the vintage Chardonnay which spends a few months in giant oak barrels). The wines are then left to rest on the lees for a minimum of 4 years to favor an enrichment of the structure and create wines ready to drink but, at the same time, capable of elegant aging.

On the nose, the Champagne Charles Ellner Blanc de Blancs Brut is intense and finely complex. Marine notes dominate the aromatic profile, followed by white flowers, citrus, medlar, and green apple. On the finish, there are light hints of wildflower honey and yeast. On the palate, the wine is elegantly dominated by a very pleasant minerality. The perlage is fine and persistent. The lively acid note is well harmonized by the excellent creaminess. The aftertaste recalls aromas of the sea, wild berries, and aromatic herbs. It goes beautifully with raw seafood, oysters, white fish tartare, and sushi.
