Celene Black Pearl Cremant de Bordeaux Brut

Celene has been making excellent sparkling wines like this Cremant de Bordeaux since 1947. Based in the village of Haux in the Entre-deux-Mers region, the winery works with a network of partner growers on both banks of Bordeaux, giving them access to the finest grapes from a variety of terroirs. Celene also boasts a historic wine cellar that was cut out of the limestone rock in the 18th century where they age their sparkling wines.

Cremant de Bordeaux has to be made using the traditional method, the same process used for Champagne, with the secondary fermentation taking place in the bottle. Celene’s magnificent Black Pearl cuvee is crafted from two black grape varieties, Cabernet Franc and Merlot, which are used to make a white sparkling wine. The wine then ages for 12 months in the cellars before its ready for release.

You’ll immediately notice the stream of tiny, delicate bubbles in the glass, followed by enticing aromas of ripe peach, zingy citrus, and toasty notes. On the palate there’s a rich, creamy texture balanced by a bright streak of acidity and a pure, clean finish. Elegant and refined, this is a great wine to serve as an aperitif although it can also be kept in the cellar for a few more years if desired.
