Asolo is known as the Pearl of Treviso, and it is where the Bianchin family of Bianchin Montello winery have made their home. They own some of the best vineyards on the Montello, a low-lying hill that gives its name to both the wider region and the winery itself.
While the region is known for producing excellent Bordeaux-style reds, Bianchin Montello’s forté is sparkling white wines. They harness the landscape of dense woods and twisting paths to magnificent effect. All of their Asolo Prosecco DOCG wines are crafted from the same sun-soaked vineyard, Vigna di Castelsotterra, in the heart of Montello.
This is the driest spumante that Bianchin Montello have to offer. With such a low amount of residual sugar, the elegant character of this Prosecco Superiore becomes even more apparent. Scents of apple, fresh citrus zest, and white elderflower rise from the bottle’s neck. On the palate, it is mouth-puckeringly tart. This is a wine with personality, lean and muscular, and showcasing concentrated flavours of tangy apple, minerality and citrus fruit. It is bold enough to enjoy alongside a main course and will go particularly well with seafood dishes or fresh cheeses.
