Sarah Crowe has successfully filled the enormous shoes of Dr. Bailey Carrodus, the winery founder, by meticulously holding on to the winery’s traditions and beliefs. She was deservedly named winemaker of the year in 2014, one of the most prestigious awards in the wine industry: a remarkable achievement and a testimony to her efforts and winemaking business.
This Australian Shiraz is robust and spicy with a velvety and a lightly syrupy mouthfeel. Laced with light nettle, vanilla, and lovely balance with berry and white chocolate flavors. The supple palate is chiseled with spicy undertones supported with velvety tannins providing a well-structured combination with a lengthy finish. It showcases a savory set of flavors.
Dark-skinned Syrah grapes are harvested by hand or machine from the wineries. They are then transferred to the winery, where they undergo destemming before being fermented on their skins to provide more depth. Fermentation takes place for 12 days with the help of yeast, after which the grapes are pressed to separate them from the skins. Some batches are transferred to oak barrels, where they undergo malolactic fermentation for up to 24 months before final filtering and bottling are done. Beef and venison pair incredibly well with this wine.
