The Tomac Rose Sparkling NV is made from 100% Pinot Noir using the saignee method. This is a relatively rare method where juice is bled-off during a normal still Pinot Noir winemaking process, usually after the grapes have been sent to a tank or cask and the juice that is drained off has been created solely from the weight of the grapes crushing each other. That juice is then sent to a different tank, to be fermented without skins, seeds, or stems, after which the Methode Traditionelle, or Champagne Method, continues. The use of this method in the Tomac Rose Sparkling NV leads to a rose that is intensely red-fruited, with a pale ruby color, and bright aromas of strawberry, cherry, and a bit of an earthy, savory note. On the palate, juicy, refreshing tastes of raspberry jam and a zesty grapefruit note end with a mouthwatering and acidic finish.
A sparkling wine with considerable body, this can stand up to slightly fuller flavors than many rose sparkling wines. Shrimp ceviche, grilled halibut with a stonefruit salsa, or fish tacos would all be delicious next to the Tomac Rose Sparkling NV.
Sparkling wine accounts for over 70% of Tomac’s production, and all of these wines are made in the Champagne method. However, the winemaker, Tomislav Tomac, is unique in that he does not have a single stainless-steel tank in his winery. Rather, all his wines are fermented (and aged) in either large clay amphora, or large oak vessels, between 2,000-3,000 liters in size.

I like the selection of nice wines a lot. What could be better is taking good care of the wines during transport. It is very cold in Holland and the wines i received yesterday where freezing cold. I hope that they are not damaged by the cold.
