For over two hundred years the Tomac family has been making wine in Plešivica close to the Croatian capital of Zagreb. Today the family works just 5.5 hectares of vines and produces limited quantities of stunning wines with little-known indigenous varieties and international classics. The Plešivica region is regarded as one of the best in the country for producing stunning sparkling wines and Pinot Noir thanks to the continental climate with warm sunny summers and cold winters.
The Tomac family have a reputation for producing top Croatian sparkling wines and currently over 70% of their production is sparkling wine. Their magnificent Tomac Diplomat Brut is made with 80% Chardonnay and 20% Plavac žuti and just 4000 bottles are produced per year. Tomac and his family use the traditional method to make their sparkling wine and so the secondary fermentation is carried out inside the bottle following the first fermentation using wild yeasts.
The wine then spends four years maturing on the lees which gives it a luxuriously creamy texture, full body and complex aromas of buttered brioche, toast, and honey. The bubbles are small and remarkably smooth in the mouth while the rich ripe fruit and pastry flavours linger long on the finish. This gorgeous sparkling wine is ideal for celebrations and will also pair beautifully with sushi, oysters or scallops.
