The Tomac Chardonnay is made of 100% Chardonnay grapes grown on the family’s estate in the Plesivica region of Croatia. Cool temperatures and aging in large neutral oak barrels leads to a crisp and fairly light version of Chardonnay. Notes of melon, apricot, and lemon burst forward on the nose, while the palate continues with flinty minerality and zesty lemon-lime and green apple flavors. The stone fruit becomes more intense on the finish, leading to a relatively long and soft ending. This wine certainly has the capacity to age for a bit, though its brightness would fade a small amount, leading to more butterscotch, spiced apple, and cooked pear flavors, and a creamier texture.
Oysters with an herb mignonette, or a stone fruit bruschetta, would be beautiful with a young example of this wine, while an older cellared version may be better suited for a milk marinated veal chop and roast potatoes.
The fruit for the Tomac Chardonnay is grown on the Tomac family’s 7 hectare estate, where they have been making wine for over 200 years. However, it is only relatively recently that they have begun bottling and selling their wine; 1987 was the first year they produced and labeled a wine for commercial sale.
