Italy’s indigenous white grape variety Pecorino is traditionally used to make refreshing white wines, but Tenuta Ulisse have created this unusual and delicious sparkling wine which is perfect as an aperitif on a hot summer’s day. The wine is made according to the Charmat method, the same technique used to make Prosecco, which uses stainless steel tanks to emphasise the fresh fruity character of the grape and create consistent small bubbles.
As soon as you pour out a glass or two you’ll notice the delicate stream of bubbles and enticing aromas of ripe pear, green apple and white flowers. The first sip reveals a delicate mousse, vibrant tropical and citrus fruit flavours and a clean finish. The refreshing acidity and bubbles make this a great match for fresh seafood or a generous plate of cheeses and charcuterie.
