Located on the hills of Pálava, a 13th-century vineyard on the slopes of Popice near Mikulov, the Sonberk winery was founded about 20 years ago, while their modern winery was built in 2008 according to a project by the famous architect Josef Pleskot, in a scenographic setting, in harmony with the surrounding landscape.
This wine is a blend of 80% Chardonnay and 20% Pinot Gris. The grapes come from the company's vineyards and are harvested by hand. The wine is aged in French oak barrels from the prestigious Francois Fréres workshop.
Sonberk's Chardonnay Pinot Gris is an extremely elegant white inspired by Burgundy wines, with a light yellow color and golden reflections. The nose reveals all the fragrances typical of the two grape varieties with refined aromas of ripe pears, mirabelle plums, peaches, pineapple, cherry blossoms, and butter biscuits. On the finish there are delicate smoky notes linked to the aging in the barrique. On the palate, the wine is creamy and fruity, full and refined with a good concentration of flavors and a pleasant acidity which makes the whole very harmonious. The finish is persistent and recalls woody notes and ripe stone fruit. Its richness makes it perfect for pairing with fish served with rich sauces or with roasted chicken or turkey.
