Solomnishvili winery is the personal project of Georgian winemaker Georgy Solomnishvili, who was also in charge of the Winiveria wines.Here in the small family estate, he treats each of his wines like an artist to a work of art and puts his soul into it. Knowing about his land, soil, climate and grapes allows him to make great wines.His Saperavi 1984 is a striking example of Georgian wine, which combines the ancient technology of Qvevri and the classic technology using an oak barrel.
The wine is made with 100% Saperavi Budeshuri grapes from vineyards located at 550 meters. The 35 years old plants benefit from the alluvial soil rich in clay, gravel and limestone. The wine is fermented in the traditional terracotta pots (Qvevri) and then aged in French oak for 18 months.
The wine has an intense and deep red color. The nose is inebriating with black cherries, red berries, dark chocolate, tobacco, and sweet spices. On the palate, it is soft, concentrated, elegant and silky, with smooth tannins, and a long spicy aftertaste. It is a wine that can be enjoyed now, but it also has excellent aging potential. Try it with aged cheeses, red meat or wild boar stews.
