Recaredo is a household name in Catalonia, acclaimed for their magnificent Cavas which boast the elegance and longevity to rival many fine Champagnes. Based in the Alt Penedes not far from Barcelona, the estate practices biodynamic and organic viticulture and insists on only producing Brut Nature vintage Cavas.
This unusual Rosé Cava has a gorgeous jewel-like ruby hue thanks to the 6-day maceration of the must with the skins of the ripe Monastrell, Pinot Noir and Garnacha grapes. Profound and powerful in character, the Intens displays a fine, gentle stream of bubbles and sensuous aromas of wild strawberries, brioche and raspberry cheesecake which seem to explode out of the flute. On the palate there is perfect balance between vibrant acidity, ripe red berry and sourdough bread flavours and a generous, full body.
All of Recaredo’s Cavas are made according to the champenoise method and they spend a minimum of 30 months ageing on the lees in the winery’s traditional cellar. Recaredo do not add sugar to any of their Cavas so this Brut Nature is bone dry, making it a very versatile gastronomic wine. Try the Terrers with a pan-fried salmon fillet, hearty risotto dishes or even Chinese-style pork ribs.
