This is a bright, vibrant red wine, made from the intriguing Paris grape. Virtually unknown outside of Chile, this grape played a vital role in the country’s wine industry until the introduction of Bordeaux grapes in the 20th century. It begins with a bouquet of raspberry, strawberry, wild mint, orange peel, and mulled wine spices.
Born and raised in Concepcion, Chile, Pedro Parra obtained a Doctorate in terroir from the Paris Centre of Agriculture, and spent about 15 years as a wine consultant, before founding his own winery. In his work, Pedro is obsessed with stone. This wine was sourced from four separate vineyards - two growing on a granite foundation, and two growing on silty basalt in Ñipas.
Before release, the Pais was aged in a mixture of concrete and oak for one year. It is a medium-bodied wine, enveloping the mouth in fine, dusty tannins. Notes of wild hedgerow berries and orange zest emerge on the palate, with underlying notes of clove, star anise, and peppermint. It leads into a peppery, youthful finish. A great choice for those seeking new grape varietals. Consider pairing it with red meat, spicy tomato sauces, or grilled vegetables.
A Birthday to Remember with DAOU & Colomé Celebrating my mother’s birthday was made even more special thanks to two incredible wines—DAOU Cabernet Sauvignon 2021 and Colomé Auténtico Malbec 2020. The star of the evening was undoubtedly the DAOU Cabernet Sauvignon. From the first sip, it enveloped us in its rich, velvety embrace. The deep dark fruit flavors, hints of cocoa, and perfectly balanced oak made every glass feel like a true indulgence. It was bold yet elegant, a wine that effortlessly brought warmth and joy to our gathering. Seeing my mother savor each sip with a smile made it all the more memorable. The Colomé Auténtico Malbec also delivered beautifully, with its pure expression of high-altitude Malbec. It was powerful, with ripe blackberries, spice, and a smooth, lingering finish—an excellent complement to the evening. These wines didn’t just enhance our meal; they became part of the celebration, elevating every toast and conversation. A heartfelt thank you to DAOU and Colomé for making this special occasion truly unforgettable!
