Pares Balta Cava Brut

Pares Balta is set in the stunning countryside close to the city of Barcelona in the Penedes wine region which is known as the heartland of Cava production. The winery’s philosophy aims to tread as lightly on the land as possible by practising organic and biodynamic agriculture and using ancestral practices like allowing sheep to graze between the vines. Pares Balta is run by two brothers, Joan and Josep Cusiné, along with their wives, Elena Jimenez and Marta Casas, who are responsible for the winemaking.
Their Brut Cava is made using the same method as Champagne with the secondary fermentation carried out in sealed bottles in the cellar. Composed of three local grapes, Parellada, Macabeo and Xarel.lo, which are typically used for Cava, this refreshing sparkling wine is aged in the bottle on the lees for 18 months to give poise and complexity to the finished cuvee.
On the nose are classic Cava notes of green apple, pear and lemon zest while the first sip reveals a crisp dryness, plenty of mouthwatering acidity and citrus flavours. A cracking aperitif thanks to the purity and freshness, this textbook Cava also makes a great match for fresh seafood, paella or rice dishes like creamy risottos.
