Domaine Nicolas Rossignol was founded in 1997, by the man of the same name. The Rossignol family are a very long line of wine-makers, and Nicolas performs his familial duty with the utmost care. He is one of many making a move towards biodynamic farming, so everything (including the cycle of the moon) is taken into account when crafting his elegant, detailed wines.
This bottle is harvested from five different plots where vines range between 10 and 60 years old, underneath the Premier Crus of “Chevret” and “Clos Des Angles”. Four lie at the bottom of the hill, in clayish soil, while the remaining fifth of the grapes are sourced from white soils at a higher elevation.
The bouquet is precise and generously spiced, with perfumed notes of raspberry, ripe plum, lavender and violet. In the mouth, it has a vigorous, lively character, with sharp acidity, fine tannins and an underlying minerality. Look for a fruity core of fleshy plums, wild berries, chocolate and earth. On the sumptuous finish, spicy hints of white pepper reveal themselves. This is an excellent example of the dense Volnay style and should be enjoyed alongside a rich game bird or an earthy mushroom risotto.
