Montepeloso winemaker Fabio Chiarelotto was born in Switzerland far away from his Tuscan roots, but his passion for winemaking soon drew him back to his native land. Today he produces superb Super Tuscan wines in the Suvereto hills in the coastal Bolgheri region. This area boasts the warmest climate in all of Tuscany, yet Fabio specialises in producing elegant, refined wines rather than the robust, powerful examples made by many of his neighbours.

Fabbio first produced Gabbro in 1997 and it has become one of the estate’s flagship wines. Made in tiny quantities each year, this stunning wine is composed of 100% Cabernet Sauvignon sourced from 35 year old vines. Just 120 cases are produced each year, making it very difficult to get hold of.

On the nose there’s an abundance of dark crushed berries, ripe plums and savoury dried herbal and spice notes. The generous full body is complemented by firm tannins and a well-built structure which will help this wine age beautifully over the next decade and beyond. If you’re keen to try it now, pair it with hearty dishes like barbecued meats, beef stews, roasted venison, or rich vegetarian dishes like aubergine parmigiana.
