Established in 1923 by local vinegrowers, La Chablisienne is a cooperative organization located in Burgundy with about 300 members spread over an area exceeding 1200 hectares. Since the 1950s, the group has introduced the practice of giving various producers full freedom in terms of winemaking with one vision: to show what nature has given them and how wonderful it can be.
The Chardonnay grapes for this Premier Cru Montmains are sourced from 25 years-old vineyards that are located right by the Serein River, on the traditional Kimmeridgian soils of Chablis, dating back to the ancient Jurassic period. After vinification, the wine rests in barrels and vats for 12 months on the lees.
When you pop the cork, you're going to get hit with a bright straw-yellow color sunset and a few golden sparkles. It smells juicy, with fragrant aromas of yellow and stone fruits, a bit of quince, and some citrus peels. And then there are some jasmine flowers and herbs, with some final toasted notes in the background. Take a sip and it's like a fruit explosion in your mouth. It's light and zesty, with a refreshing mineral taste and a brisk acid kick. This wine is like the perfect wingman for shrimp or chicken curry. They're like a match made in heaven. The smoothness and acidity of the wine pairs with the spicy food perfectly.
