It is light yellow in the glass with sweet aromatics of golden apple, citrus, and buttered toast. Structured enough to stand up to food, yet elegant enough to sip as an aperitif. Citrus notes shine through the baked golden apple and pear tinged with more exotic notes of banana and pineapple. The finish is clean and persistent, leaving nuances of browned butter and toasted nuts to linger on.
Serve this Chardonnay well chilled at around 8°-10°C. It is most excellent as an aperitif, not to mention when paired with hummus, grilled lobster, charcuterie, or wild berries and fresh cream.
Azienda Agricola Inama has been farming their land Organically for over 40 years in order to yield a better fruit. All of the grapes are harvested by hand. The Chardonnay grapes used to elaborate this wine were selected from the Monteforte d’Alpone and San Bonifacio plots in the Soave Classico and Pedemontana areas. The 25-year-old vines are planted on 3 hectares of Basaltic lava soil.
Once harvested, the fruit is transported to the cellar for de-stalking, crushing, and pressing at a cold temperature. The grapes are lightly crushed with their skins on, for 3 hours, then pressed. After the pressing, the must is allowed to settle for about 12 hours, still maintaining the cold temperature to prevent oxidation. The fruit is transferred to stainless steel vats for fermentation and the wine is filtered before it is bottled.
