Located in the Galilee, in the town of Katzrin, Israel, Golan Heights Winery was founded in 1983. Since 1992, the winery's operations have been managed by renowned winemaker Victor Schoenfeld, who, through rigorous vineyard mapping and the use of cutting-edge winemaking techniques, has significantly boosted the winery's reputation, now considered one of the best in the country.
Chardonnay grapes are harvested in the northern Golan Heights, from vineyards located at altitudes up to 1,200 meters. Here, the cool climate (this is considered the coldest wine region in the country), the rocky volcanic soil, and the altitude create ideal conditions for Chardonnay, which can best express its aromatic breadth. After vinification, the finished wine ages for 7 months in barriques (half of which are new). This step adds roundness and structure to the wine.
On the nose, Yarden Chardonnay reveals a broad and fragrant aromatic profile with notes of pear and pineapple on a citrus background, followed by hints of wildflowers and a touch of minerality. On the palate, it has a medium-full body and a lively acidity. It is fresh, juicy, and balanced, with a long, persistent finish that recalls delicate spicy notes. Try it with scallop risotto, roasted chicken, or tagliolini with white truffle.
