Galil Mountain Winery was founded in 2000 in the Upper Galilee region where wine has been made for at least two millennia. The region is home to Israel’s highest mountain range with altitudes of up to 1000 metres above sea level. This produces perfect conditions for crafting delicious wines thanks to the combination of a hot and sunny Mediterranean climate and the cooling effect of the nearby mountains.
This big, bold Cabernet Sauvignon is sourced from the winery’s estate vineyards planted on the wild, mountainous slopes of the Upper Galilee. Once the grapes are harvested they are fermented in stainless steel tanks to preserve the varietal character and enhance the freshness and aromatics in the finished wine. The young wine is then aged in stainless steel for 6 months prior to bottling.
Cassis, blackberry and dark cherry notes immediately burst out of the glass along with hints of dark chocolate, baking spice and dried herbs. The first sip reveals a rich full body, firm tannins and luscious dark fruit flavours with a long finish. The powerful flavour profile makes this wine a great match for rich tomato-based pasta dishes, barbecued meats, or game like venison.
