Domaine François Chidaine is located in the Loire Valley and precisely in Montlouis-sur-Loire. The company produces excellent wines based on Chenin Blanc, Sauvignon Blanc, Pinot Noir, and other local vines, with grapes grown in the estate's vineyards, which extend over approximately 45 hectares and have been cultivated biodynamically since 1999.
Montlouis Les Bournais by François Chidaine is a white produced with Chenin Blanc grapes, coming from vineyards aged between 10 and 24 years, located on clayey-limestone soils with the presence of the characteristic Tuffeau subsoil. The name "Les Bournais" in fact refers to clayey, acidic, and deeply humid soils. After the manual harvest, the must is placed in demi-muids for spontaneous fermentation. The finished wine is then aged for 11 months on the lees, always in demi-muids.
The wine has a brilliant color with straw yellow tones. The nose reveals a fragrant and broad bouquet with aromas of yellow and exotic fruit, white flowers, and flint. The mouth is rich and complex, fresh and mineral. The finish is long and harmonious. It is an elegant wine that pairs perfectly with scallop risotto or fish in a citrus sauce.
