Domaine Henri Boillot Volnay Premier Cru Les Chevrets 2021

This is a classic Burgundy wine in a deep, tarry red colour, made of Pinot Noir from the celebrated Volnay appellation. It begins with scents of red cherry and other stone fruits, bright red berries, and whiffs of dried rose petals. Les Chevrets is a Premier Cru that is largely planted on clay- and limestone-rich soils, imparting a full-bodied mouthfeel to the Pinot Noir.

Domaine Henri Boillot is cleverly placed between the appellations of Puligny-Montrachet and Volnay, two of the most celebrated regions in Burgundy and the origins of most Boillot wines. The winery has been a Burgundy staple since 1885, when it was founded by Henri Boillot’s grandfather, and has been a proponent of low-intervention winemaking since the 1990s.

In the mouth, Les Chevrets exhibits a bold, fruit-forward attack, layered with red hedgerow berries and stone fruits. There is an underlying touch of umami, and the wine’s bright acidity is balanced out by silky, barely-there tannins. The finish is long, vibrant, and packed with minerals. Aged in oak before bottling, this Burgundy is ideal for pairing with beef stews, tomato pasta, or cheese infused with red fruits.
