Domaine Bonnet Cotton is a Beaujolais winery founded by the Sanvers family in 1856 and then taken over in 1976 by Evelyne and Guy Cotton. Today the estate, which extends over approximately 12 hectares of vineyards in various appellations in the surrounding area, is managed by Pierre Cotton together with his partner Marine Bonnet. The vineyards are organically grown and the wines are made without any addition of sulfur.
Gamay grapes are hand-picked from organically grown vines between 70 and 100 years old from a 1.5-hectare plot called Les Grillés. After whole-cluster carbonic maceration and spontaneous fermentation, the finished wine rests in barrels for 8 months before bottling without filtration or fining.
Cote de Brouilly Les Grilles is a fresh, lively, and juicy wine with a fragrant aromatic profile of raspberry, blackberry, and other small red fruits, with a broad background of spicy and floral notes and hints of coffee and licorice. On the palate, it has a medium body and a good concentration of fruit. It is balanced with a lively acidity and a long and delicious finish. It is the ideal wine for small game birds, such as quail and partridge, but it also pairs well with duck breast.
