De Bortoli is an almost century-old family winery, with a direct line back to Vittorio De Bortoli, who made the perilous journey from Treviso to New South Wales in the 1920s. These days, the family owns parcels of land in some of the finest Australian terroirs and is recognised for creating the country’s equivalent of Sauternes - the incredible Noble One.
Noble One is a wine that once seemed impossible in the dry heat of Australia, yet has become one of the most awarded wines in the country. It is crafted from 100% botrytis-influenced Sémillion, pressed into life by winemaker Julie Mortlock. It starts with a bouquet of luxurious stone fruit, dried apricot, candied lemon peel, and honeysuckle, before expanding into a rich, zesty, and inherently sweet palate.
In the mouth, you can discover an unctuous, syrupy mouthfeel, balanced out by incisive levels of acidity. Notes of nectarine and peach collide with citrus fruits, vanilla, and warm honey liqueur. Noble One was matured in French oak for 12 months. It is one of those rare wines that can be paired with blue cheese, and it can also be enjoyed alongside meat pâtés or a fruit-based dessert. Similar to French Sauternes, Noble One’s high acidity and inherent sweetness allow it to be aged for a very long time.
