This stunning Cabernet is the handiwork of famed winemaker and former Wine Spectator editor Jeff Morgan. Morgan co-founded Covenant Wines in 2003 out of a vision to make top quality kosher wines in Napa and today the winery is widely considered one of the world’s top kosher wine producers. Covenant wines have been highly praised by top international wine reviewers like Robert Parker and Wine Spectator for their excellent quality and authentic flavour profiles.
The Covenant Napa Cabernet is a truly magnificent kosher red composed of prime fruit from Mount Veeder and Oakville. Rather than crushing the grapes to release the juice, this wine is only made from the free run juice which gives greater purity of flavour and intensity of fruit. The young wine is aged in French oak barrels for 18 months to add finesse and extra complexity before bottling.
On the nose there are intense blackcurrant, dark cherry and cedar notes while the first sip reveals succulent crushed berries, licorice and hints of dark chocolate. The firm tannins, muscular structure and full body make this a great partner for hearty red meat dishes, although it also makes a handsome addition to any collector’s cellar and will continue to evolve over the next decade and beyond.
