Founded in 1980 by a trio of friends, over the past four decades the COS winery has transformed the Sicilian wine industry with their pioneering approach to winemaking. In the vineyards they use biodynamic agricultural practices to minimise their impact on the natural world while in the winery fermentations are carried out with indigenous yeasts.
This sensational orange wine is made from the local Grecanico grape variety with the grapes macerated on their skins to give an incredible golden colour and depth of flavour. The wine is fermented and matured for seven months in large terracotta amphorae known as “giare” which closely mimic ancient winemaking techniques and help to showcase the pure varietal character in the finished wine.
On the nose you’ll find hints of tropical fruit, cider and green olive which are joined on the palate by ripe white peaches and toasted almonds. The full body and rich, creamy texture are carefully balanced by a vibrant acidity which gives harmony to this intense wine. An ideal candidate to enjoy alongside a fine meal, this special orange wine would pair well with fish served in a creamy sauce, risotto dishes or a plate of fresh pasta served simply with olive oil, garlic and Parmesan cheese.
