This is a bold Bordeaux blend from Saint-Émilion, loaded with scents of ripe plum, roses, red cherry, cassis, truffle and liquorice. In terms of composition, it is classic Right Bank: 84% Merlot and 14% Cabernet Franc, with a small splash of Cabernet Sauvignon.
Chateau Pavie Macquin is named for the grandfather of the current owners, who single-handedly saved Saint-Émilion during the phylloxera epidemic of the 19th century, by grafting vines onto untainted American rootstock. The Chateau also occupies one of the most prominent locations in the appellation - an illustrious plateau overlooking the commune of Saint-Émilion.
A subtle oaky structure outlines every mouthful of this esteemed red. Black and blue hedgerow berries mingle at the front of the palate, while firm hints of liquorice, cocoa, orange peel, chalk and mushroom fill out the background. It is full-bodied, with a powerful tannic structure and will age magnificently in the cellar, coming into maturity about 6 to 7 years after the vintage date. This is a wine that requires some patience. When you open it, serve it at room temperature, and consider pairing it with top-quality steaks, rich stews, or any classic French red meat dish.
