Vincent Couche is one of the foremost organic wineries in France, with vineyards in the legendary regions of Chablis and wider Burgundy, and more importantly, Champagne. The winery was founded in 1996, in the heart of Côte des Bar. Vincent Couche sparkling wines are characterised by their complete lack of added sugars, opting for a pure, absolutely dry expression of the famous region.
The Rosé Désir is crafted from 90% Pinot Noir and 10% Chardonnay, all plucked from the Champagne sub-regions of Montegeux and Buxeuil, where the soils are largely composed of chalk and flint, and limestone and clay, respectively. It pops with a sumptuous nose of strawberry, cassis, pomegranate, white flowers, and citrus rind.
These notes continue onto the palate, with twists of grenadine, brioche, and minerality. Désir is mouth-wateringly dry overall, bringing a pure, intense expression of the grapes. The mousse fills the mouth, bringing a texture that verges on full-bodied. It shows a solid vein of acidity, heightening the flavours and driving the experience into a long, satisfying finish. This is a perfect companion for a variety of starters, such as charcuterie boards, but it also contains enough bubbly character to be served as an aperitif on its own.
