The Cuvée Eminence is aged for a minimum of three years in a traditional Champagne cellar and finished with minimal dosage to allow the natural beauty of the Pinot Noir and Chardonnay grapes to show through. Green tea, honey and jammy apricot aromas spill out of the flute, leading on to white peach, aniseed and raspberry flavours on the palate.
The delicate bubbles produce a smooth mousse which is complemented by fresh acidity and a well-rounded texture. Thanks to the high percentage of Pinot Noir in the assemblage, this vivacious Premier Cru Champagne pairs well with hearty fish dishes or a decadent dessert of pears poached in sparkling wine.
Produced by the Paul Berthelot Champagne house, the Cuvée Eminence begins life close to the village of Dizy where the family own 16 hectares of prime Pinot Noir and Chardonnay vineyards. Founded by Emile Berthelot in the late 19th century, the estate has been lovingly handed down through the family and is now looked after by Arnaud and his wife Valerie who represent the fifth generation of Berthelots to make Champagne here. The family prefer to use only the grapes they grow in their own vineyards, allowing them to control every aspect of the grape growing and winemaking process. The result is luxurious Champagnes that stand out for the genuine passion, care and attention to detail that goes into making each bottle.
