Located in Bar-sur-Seine, in the Côte de Bars, the Champagne House La Borderie was founded in 2013 by Simon and Maria Normand who work the 11 hectares of family vineyards with great attention and care to produce elegant and high-quality wines.
Trois Contrees is a Champagne produced from three different grape varieties (Pinot Noir, Chardonnay, Pinot Blanc) from three different vineyards (Val Moré, Les Devoix and Clos Bidaut) each with a different exposure. The grape variety with the highest percentage is Pinot Noir which is partially vinified in wood. A 15% of reserve wine is also added. The Champagne rests in the cellar on the lees for 30 months.
Its color is golden, with some light nuances tending towards amber. Its aromatic profile is fragrant and broad. On the nose it reveals elegant notes of pink grapefruit and red berries, white flowers and sweet spices. On the palate it is elegant and lively. It has a well-balanced acidity and a creamy consistency. The finish is long and recalls gentle notes of brioche. It is excellent with tuna or salmon tartare, or with avocado toast with either poached egg or smoked salmon.
