Brimoncourt is located in Ay, in the historic center of the vineyards, in gardens and buildings that are around 200 years old. The company manages to balance modernity and tradition intelligently and interestingly, producing wines of the highest quality characterized by great freshness, elegance, and harmony. The current owner, Alexandre Cornot, who bought the Champagne house in 2008, has added a peculiar touch of his personality to each of his creations with a rigorous selection of grapes.
The Regence Brut of the Brimoncourt Champagne house is a blend of Chardonnay (about 80%) and Pinot Noir, vinified in steel vats and aged for 42 months on its lees. It is a seductive and rounded wine that perfectly embodies the Brimoncourt style.
The color is light and golden, and the perlage is fine and persistent. The nose reveals a good freshness and complexity of white flowers and mineral touches. On the palate, it is fresh, with notes of stone fruit and a great balance. The finish is persistent, elegant, and delicately fruity. This Champagne is perfect with fish tartare, smoked salmon, and pan-fried scallops. It can also be combined with a fairly young Parmesan and is perfect for an aperitif.
