The Domaine du Pavillon is part of the Maison Albert Bichot, which includes 6 estates throughout Burgundy. The headquarters and cellar of the Domaine are located in an eighteenth-century building, surrounded by an ancient walled enclosure, south of Pommard, in the Côte de Beaune. The vineyards extend over 15 hectares, 4 of which are located in the Pommard monopoly "Clos des Ursulines".
The Chardonnay grapes come from 30-year-old vines of average age, located on a parcel of 1.17 hectares, and planted on clay-limestone soils. This particular terroir, located mainly in the "Charmes dessus" area, extends over two distinct types of soil: the first, mainly clayey, gives the wines great richness and breadth, and the second brings minerality. The grapes are harvested by hand and vinified in oak barrels (60% of which are new). The wine is then aged for 12-15 months in barrels.
Domaine du Pavillon's Meursault Premier Cru "Charmes" reveals an aromatic profile of great variety and complexity with notes of candied lemon and almonds, white flowers, and freshly baked bread. On the palate, the wine displays a broad, silky character with brioche and sweet spice flavors and an almost waxy texture. The finish is persistent and aromatic. Try it with fine fish or white meat recipes.
